'My mom made this Beef and Bacon Gnocchi Casserole for my family a few months ago, and we all loved it (kids included!). The creamy sauce coats the chewy gnocchi pasta in this quick and easy comfort food dish. Beef and Bacon Gnocchi Casserole (adapted from Taste of Home magazine) 8 slices of bacon 1 lb. ground beef 1 medium sweet onion, chopped 1-16 oz. bag frozen gnocchi 1 c. water 1/2 c. heavy cream 1 Tbsp. ketchup 1/2 c. canned diced tomatoes, drained (1/2 of a 15 oz. can) salt and pepper to taste 1.5 c. shredded sharp cheddar cheese Preheat oven to 375 degrees. Bring a medium pot of water to a boil. Cook bacon over about medium heat in a large skillet until chewy-crisp. Drain on a paper towel. Drain bacon grease reserving 1 Tbsp. Add the chopped onions and cook until they start to soften. Add the ground beef and cook until browned. While the beef cooks, pour the gnocchi pasta into the boiling water and cook according to package directions (about 2-3 minutes). Drain the pasta. Drain any excess fat from the meat and onions in the skillet. Add the water, heavy cream, ketchup, and diced tomatoes to the skillet. Season to taste with salt and pepper. Stir the sauce to combine. Add the cooked gnocchi and crumble in 4 of the bacon pieces. Stir everything together. Simmer for a few minutes until the sauce thickens. Sprinkle the shredded cheddar cheese all over the top of the casserole. Bake at 375* for a few minutes or until cheese is melted and bubbling. Crumble the remaining bacon over the top.
